- 2 eggs
- 1 small avocado (optional)
- 1 handful baby spinach or arugula
- 1 whole tomato (sliced)
- 1 teaspoon olive oil
- salt (to taste)

- lemon juice (a splash, optional)
- 1 teaspoon mustard or Dijon mustard (optional)
- fresh herbs (of choice (e.g. basil, parsley))
Instructions
- Start by toasting the two slices of whole grain bread using a toaster or grill until golden brown and crispy, about 4-5 minutes.
- While the bread is toasting, heat some olive oil in a pan over medium heat. Wait until the oil shimmers slightly, which takes about 2 minutes.
- Carefully crack the two eggs into the pan. Fry them for 4-5 minutes until the whites are set but the yolks remain runny.
- In the meantime, arrange the baby spinach or arugula and sliced tomato on a plate, which takes about 2 minutes.
- Once the bread is toasted, place it on the plates with the vegetables and gently place the fried eggs on top, being careful not to break the yolks.
- For an extra touch, slice the avocado and place it on the powerschnitte. If desired, add a splash of lemon juice and fresh herbs. This will take about 3 minutes.
- Season the dish with salt and pepper to taste and serve immediately while the eggs are still warm. Enjoy!
