  • 2 slices whole grain bread (or other bread of choice)
  • 2 eggs
  • 1 small avocado (optional)
  • 1 handful baby spinach or arugula
  • 1 whole tomato (sliced)
  • 1 teaspoon olive oil
  • salt (to taste)
  • pepper (to taste)
  • lemon juice (a splash, optional)
  • 1 teaspoon mustard or Dijon mustard (optional)
  • fresh herbs (of choice (e.g. basil, parsley))

Instructions

  1. Start by toasting the two slices of whole grain bread using a toaster or grill until golden brown and crispy, about 4-5 minutes.
  2. While the bread is toasting, heat some olive oil in a pan over medium heat. Wait until the oil shimmers slightly, which takes about 2 minutes.
  3. Carefully crack the two eggs into the pan. Fry them for 4-5 minutes until the whites are set but the yolks remain runny.
  4. In the meantime, arrange the baby spinach or arugula and sliced tomato on a plate, which takes about 2 minutes.
  5. Once the bread is toasted, place it on the plates with the vegetables and gently place the fried eggs on top, being careful not to break the yolks.
  6. For an extra touch, slice the avocado and place it on the powerschnitte. If desired, add a splash of lemon juice and fresh herbs. This will take about 3 minutes.
  7. Season the dish with salt and pepper to taste and serve immediately while the eggs are still warm. Enjoy!
